Chicken/
8 skinless bone in chicken thighs
and drumsticks
1¼ water
¼ cup grapeseed oil
1 cinnamon stick
1 clove
2 onions (thinly sliced)
1 tbsp fresh ginger (grated)
4 garlic cloves (grated)
2 tsp ground coriander
1½ tsp ground cumin
1 tsp paprika
½ tsp tumeric
3 small tomatoes (diced)
1 lbs Yukon Gold potatoes (cut into chunks)
Salt and Pepper for season to taste
Cilantro (garnish)
Basmati/Jasmine Rice (cooked)
1. Season chicken with s/p
Heat 2 tablespoons grapeseed oil in a large pot over high heat
Add chicken in a single layer and brown (3-4 mins each side) Remove.
2. Reduce the heat and add remaining oil along with cinnamon stick and clove. Cook, stir until the whole spices are toasted (30 sec)
3. Add onions season with salt cook, stirring until browned (8 mins) add ginger and garlic cook about (2 mins)
Add coriander, turmeric, paprika, cumin until toasted (30 secs)
4. Add tomatoes cook until they breakdown (4 mins). Return chicken back to the pot. Stir in 1¼ cup of water bring to boil. Cook chicken until almost done and sauce has thicken (12 mins).
5. Add potatoes (submerge them) season with salt. Cover and cook until chicken is tender and potatoes are soft (20mins)
6. If the sauce is too thick, thin it with water. Season with salt and pepper to taste. Serve on top of rice topped with cilantro. Enjoy
